Johanna Setta : Co-Coordinator

Johanna manages Farm to Institution and Gleaning Programming for the Healthy Roots Collaborative. This includes food initiatives at Northwestern Medical Center, working on Farm to School initiatives with the Farm to School Coordinator, and coordinating the Healthy Roots Gleaning Program. In addition, you can find her sourcing local product for events and businesses, maintaining our network of diversified producers, working with our grant writer on funding opportunities, and developing new Healthy Roots programming. She believes healthy local food is preventive care that everyone should have access to. She is currently enrolled in a nutrition program to compliment her work in local food systems.

Koi Boynton : Co-Coordinator

Koi manages Farm to School and Gleaning for the Healthy Roots Collaborative. This includes working closely with our Farm to School Coordinator, Rachel Huff to build vibrant farm to school programs across Franklin and Grand Isle and coordinating the Healthy Roots Gleaning Program. When she is not working with schools or in the fields gleaning produce, she supports Healthy Roots strategic planning, fundraising and new program development. Koi has a rich history of supporting local food systems in Vermont and believes that access to fresh local foods and connections to farms can transform the health and vitality of our communities.

Rachel Huff : Farm to School Coordinator

Farm to School Coordinator

Rachel is our Healthy Roots Farm to School Coordinator. She has been involved in VT farm to school efforts since 2008. Her priority as a farm to school consultant is to engage youth and their families in the local food system, supporting a culinary and cultural shift to whole, healthy, local food. During the school year she helps guide local food purchasing by school chefs and food service managers, leads gardening and cooking activities, and after school program.  She sees farm to school as an opportunity to get more kids eating healthy food and provide our schools with meaningful, hands-on learning experiences.

Peter Jenkins : Gleaning Coordinator

Gleaning Coordinator

Peter Jenkins joins Healthy Roots in 2019 as our Gleaning Coordinator. Peter has a passion for working at the intersections of education and agriculture. He has a background in environmental education, program coordination, and farming. As Gleaning Coordinator, his priority is building strong relationships with farmers, volunteers, and produce recipient sites. Peter believes that access to healthy food is a human right and is dedicated to connecting more people to good food and to our local farm economy.
